With a passion for Vietnamese cuisine, Sam has a deep understanding of the country's traditional ingredients and food culture. Sam is bringing a modern and progressive approach to the Vietnamese gastronomy through his experiments with clean flavours and new techniques. In 2012, he started his culinary career at the previous Singapore's best restaurant called Restaurant Andre. After that, he worked in asian kitchens across Asia, Middle east, and Europe. He continued working in Copenhagen for a Michelin establishment company, Kiin Kiin. Sam enjoys good wines and would pair them with good food for the sake of "fun dining" experience.
Despite his young age, Jimmy has a wealth of experience working with Asian cuisine in high end restaurants and five starred hotels. Sharing a love for Vietnamese dynamic cuisine, Jimmy prepares simple traditional dishes with refined and modern techniques using his organisational and creative skills. Jimmy has worked at several acclaimed restaurants in Copenhagen including Kokkeriet and the sisters restaurant of the Kiin Kiin. His creative talent in the kitchen is matched by a drive to deliver the best possible dining experience for customers.
Hien has over 40 years of experience with Vietnamese cuisine and has a vast knowledge of the ingredients and flavours of Vietnam. His trademark skill lies in the way he interprets classic traditional dishes, remaining faithful to the original ingredients but always adding a personal touch to delight diners. He has lived in Denmark since the late 1970’s, and his unique approach to Vietnamese cuisine ensures that his dishes deliver taste and innovation in equal measure.
